With his cafe and restaurant, Kasbah Caf\u00e9, located in New York, he is on a mission to tantalise the taste buds of food enthusiasts.<\/p>\n<p class=\"selectionShareable\">\u201cI get people here who don\u2019t even know where Algeria is or even heard of a country called Algeria,\u201d says Fekraoui, who co-runs Kasbah Caf\u00e9 with his wife Amina Fekraoui since 2021.<\/p>\n<p class=\"selectionShareable\">Teal pillows, chairs, and arabesque tiles adorn the interior of the\u00a0<a href=\"https:\/\/cafekasbah.com\/\">Kasbah Caf\u00e9<\/a>. The colour is associated with Algeria and the Mediterranean coast \u2014 the Fekraouis hail from the port town of\u00a0<a href=\"https:\/\/www.britannica.com\/place\/Jijel\">Jijel<\/a>. They prepare traditional Algerian dishes from scratch, ranging from chicken\u00a0<em>tajine<\/em>\u00a0to\u00a0<em>berkoukes<\/em>\u00a0and\u00a0<em>mhadjeb<\/em>.<\/p>\n<blockquote>\n<p class=\"selectionShareable\">&#8220;The hardest part is that when people in San Francisco hear we are an Algerian place, they say &#8216;Oh, Middle Eastern? Oh, Moroccan?&#8217; I have to educate people about my cuisine. We\u2019re getting there but still working on it&#8221;<\/p>\n<\/blockquote>\n<p class=\"selectionShareable\">In New York and the Bay Area, home to two concentrations of the Algerian diaspora in the US, Algerian chefs like Fekraoui hope serving their native cuisine will boost Algeria\u2019s profile to the level of other Arab and Mediterranean cuisines like Palestinian, Moroccan, and Egyptian, which are well-represented in the US.<\/p>\n<div class=\"ad-gpt-pro\" data-web=\"[480, 320], [400, 300], [336, 280], [300, 300], [300, 250], [250,250]\" data-tablet=\"[480, 320], [400, 300], [336, 280], [300, 300], [300, 250], [250,250]\" data-mob=\"[300, 300], [300, 250], [250,250]\">\n<div id=\"div-gpt-ad-inread-1\" class=\"ad-gpt-pro-slot\" data-google-query-id=\"CJa0pszkh4QDFXEB-wMducsHeQ\">\n<div id=\"google_ads_iframe_\/270638763\/TNA_InRead_0__container__\">\u201cIt is about educating that we are here,\u201d says Samia Behaya, owner and chef of <a href=\"https:\/\/www.simplecafenyc.com\/\">Simple Cafe &amp; Restaurant<\/a>, a French Algerian restaurant in Brooklyn, New York.<\/div>\n<\/div>\n<\/div>\n<table border=\"1\" cellspacing=\"1\" cellpadding=\"1\">\n<tbody>\n<tr>\n<td><iframe id=\"instagram-embed-0\" class=\"instagram-media instagram-media-rendered\" src=\"https:\/\/www.instagram.com\/reel\/CxyNr-HxriW\/embed\/?cr=1&amp;v=14&amp;wp=956&amp;rd=https%3A%2F%2Fwww.newarab.com&amp;rp=%2Ffeatures%2Falgerian-cuisine-tickles-taste-buds-us-palette#%7B%22ci%22%3A0%2C%22os%22%3A3110.0999999046326%2C%22ls%22%3A1538.0999999046326%2C%22le%22%3A3102.399999856949%7D\" height=\"803\" frameborder=\"0\" scrolling=\"no\" allowfullscreen=\"allowfullscreen\" data-instgrm-payload-id=\"instagram-media-payload-0\" data-mce-fragment=\"1\"><\/iframe><\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p class=\"selectionShareable\"><strong>Algerians in America<\/strong><\/p>\n<p class=\"selectionShareable\">Algerian Americans in the US feel that Algeria is overshadowed by its neighbours in the Maghreb region.<\/p>\n<p class=\"selectionShareable\">\u201cPeople here don\u2019t know much about Algeria and it\u2019s frustrating because people know Morocco and Tunisia, even though Algeria is the biggest in North Africa,\u201d says Mohcen Haouara, a resident of New York City, originally from the Algerian city of Batna.<\/p>\n<p class=\"selectionShareable\">Algeria is the largest African country by landmass but its diaspora in the US is small. Fewer than 50,000 Algerians are estimated to live in the US, out of 3.7 million Arab Americans, according to the\u00a0<a href=\"https:\/\/www.aaiusa.org\/demographics\">Arab American Institute<\/a>.<\/p>\n<div class=\"embedded-entity\" data-embed-button=\"node\" data-entity-embed-display=\"view_mode:node.inline_entity_embed\" data-entity-type=\"node\" data-entity-uuid=\"a06361d4-0927-4ff9-bb2e-cf53002e951c\" data-langcode=\"en\">\n<div class=\"node node--type-features node--view-mode-inline-entity-embed horizontal-media-teaser-view-mode xsmall anchor-all clearfix\" data-history-node-id=\"2599931\" data-template=\"template-6\">\n<div class=\"left col-6 col-sm-6\">\n<div class=\"inline-embed-entity\">\n<div class=\"embed-entity-title\">\n<div class=\"field field--name-node-title field--type-ds field--label-above\"><\/div>\n<\/div>\n<div class=\"embed-entity-wrappers\">\n<div class=\"embed-entity-author-date\">\n<div class=\"field field--name-field-auth-loc field--type-entity-reference field--label-hidden field__items\">\n<div class=\"field__item\">\n<div class=\"author-location author-location--type-author-location author-location--view-mode-author-name-text text-teaser-view-mode small anchor-all clearfix\">\n<div class=\"main-content\">\n<div class=\"field field--name-field-author field--type-entity-reference field--label-hidden field__item\"><\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<p class=\"selectionShareable\">But Algerians have been in the US\u00a0 just as long as other Arabs. The first Algerian arrived in the country in 1892, in the first wave of Arab immigration from Greater Syria in the 1880s, according to the US. Department of State and the Algerian Embassy.<\/p>\n<p class=\"selectionShareable\">Although most Algerians in the US today immigrated between the 1970s to 1990s, Algerian restaurants only opened up in the country in the last two decades.<\/p>\n<p class=\"selectionShareable\">\u201cAlgeria was colonised, the colonisers left, and then we had a civil war, so there\u2019s a lot that Algeria\u2019s been dealing with, and growing up, older generations didn\u2019t want to talk about it,\u201d says Hasnia Bekkadja, an Algerian-American residing in New York City.<\/p>\n<p class=\"selectionShareable\">\u201cToday, we\u2019re starting to talk about our culture and put it more on the map. Through representation, we start to talk about culture.\u201d<\/p>\n<h3><strong>East meets West<\/strong><\/h3>\n<p class=\"selectionShareable\">For some Algerian chefs in the US, putting Algerian cuisine on the map hasn\u2019t been an easy journey.<\/p>\n<div class=\"ad-gpt-pro\" data-web=\"[480, 320], [400, 300], [336, 280], [300, 300], [300, 250], [250,250]\" data-tablet=\"[480, 320], [400, 300], [336, 280], [300, 300], [300, 250], [250,250]\" data-mob=\"[300, 300], [300, 250], [250,250]\">\n<div id=\"div-gpt-ad-inread-2\" class=\"ad-gpt-pro-slot\" data-google-query-id=\"CNG3zdbkh4QDFcgB-wMd6gIOtg\">\n<div id=\"google_ads_iframe_\/270638763\/TNA_InRead_1__container__\"><\/div>\n<\/div>\n<\/div>\n<p class=\"selectionShareable\">\u201cThe hardest part is that when people in San Francisco hear we are an Algerian place, they say &#8216;Oh, Middle Eastern? We\u2019re getting there but still working on it,\u201d says Wafa Bahloul, co-owner and chef of Kayma Algerian Eatery in San Francisco.<\/p>\n<table border=\"1\" cellspacing=\"1\" cellpadding=\"1\">\n<tbody>\n<tr>\n<td><iframe id=\"instagram-embed-1\" class=\"instagram-media instagram-media-rendered\" src=\"https:\/\/www.instagram.com\/p\/Cj8rfBkyzRy\/embed\/?cr=1&amp;v=14&amp;wp=956&amp;rd=https%3A%2F%2Fwww.newarab.com&amp;rp=%2Ffeatures%2Falgerian-cuisine-tickles-taste-buds-us-palette#%7B%22ci%22%3A1%2C%22os%22%3A3116.5999999046326%2C%22ls%22%3A1538.0999999046326%2C%22le%22%3A3102.399999856949%7D\" height=\"684\" frameborder=\"0\" scrolling=\"no\" allowfullscreen=\"allowfullscreen\" data-instgrm-payload-id=\"instagram-media-payload-1\" data-mce-fragment=\"1\"><\/iframe><\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p class=\"selectionShareable\">Kayma, which means tent in Arabic, is the first and only Algerian restaurant in the Bay Area.<\/p>\n<p class=\"selectionShareable\">\u201cI feel proud but it\u2019s a big responsibility because I\u2019m the picture of my country and culture, I have to give each dish, like every part of our culture, in the right way,\u201d Bahloul says.<\/p>\n<p class=\"selectionShareable\">Since starting operations in 2020, Bahloul balances keeping her dishes authentic with adapting to local consumer trends, for example, by serving couscous in fast-casual bowls.<\/p>\n<p class=\"selectionShareable\">\u201cPeople don\u2019t want to risk their money to buy things they don\u2019t know,\u201d Bahloul says. \u201cSo I do tastings and let people try free samples and explain the Algerian names of dishes in English.\u201d<\/p>\n<div class=\"embedded-entity\" data-embed-button=\"node\" data-entity-embed-display=\"view_mode:node.inline_entity_embed\" data-entity-type=\"node\" data-entity-uuid=\"9178cc57-b2ad-4a67-8809-c7e22fcf589b\" data-langcode=\"en\">\n<div class=\"node node--type-features node--view-mode-inline-entity-embed horizontal-media-teaser-view-mode xsmall anchor-all clearfix\" data-history-node-id=\"2807997\" data-template=\"template-6\">\n<div class=\"left col-6 col-sm-6\">\n<div class=\"inline-embed-entity\">\n<div class=\"embed-entity-title\">\n<div class=\"field field--name-node-title field--type-ds field--label-above\"><\/div>\n<\/div>\n<div class=\"embed-entity-wrappers\">\n<div class=\"embed-entity-author-date\">\n<div class=\"field field--name-field-auth-loc field--type-entity-reference field--label-hidden field__items\">\n<div class=\"field__item\">\n<div class=\"author-location author-location--type-author-location author-location--view-mode-author-name-text text-teaser-view-mode small anchor-all clearfix\">\n<div class=\"main-content\">\n<div class=\"field field--name-field-author field--type-entity-reference field--label-hidden field__item\"><\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<p class=\"selectionShareable\">Simple in New York features both Western and North African dishes on the menu, like brioche French toast and crepe baghrir, a semolina pancake with mint, orange blossom, and dates, which helps to draw in diners unfamiliar with Algerian food without sacrificing authenticity.<\/p>\n<p class=\"selectionShareable\">\u201cThe concept is interesting because it is a fusion of French and Algerian. The restaurant attracts New Yorkers and members of the Algerian diaspora looking for an authentic Algerian experience.<\/p>\n<p class=\"selectionShareable\">\u201cWhenever I miss home, I go there,\u201d says Haouara, who moved to New York City in 2012 and visits Kasbah Cafe regularly. \u201cI was blown away, they really want to keep it as authentic as possible.\u201d<\/p>\n<p class=\"selectionShareable\">Fekraoui believes Kasbah Caf\u00e9 doesn\u2019t need to Americanise dishes to succeed. Maintaining authenticity is an expression of pride in Algeria\u2019s culinary traditions.<\/p>\n<div class=\"ad-gpt-pro\" data-web=\"[480, 320], [400, 300], [336, 280], [300, 300], [300, 250], [250,250]\" data-tablet=\"[480, 320], [400, 300], [336, 280], [300, 300], [300, 250], [250,250]\" data-mob=\"[300, 300], [300, 250], [250,250]\">\n<div id=\"div-gpt-ad-inread-3\" class=\"ad-gpt-pro-slot\" data-google-query-id=\"CKjzkdrkh4QDFWK4JwIdVoQDKQ\">\n<div id=\"google_ads_iframe_\/270638763\/TNA_InRead_2__container__\"><\/div>\n<\/div>\n<\/div>\n<p class=\"selectionShareable\">\u201cSome people advised me not to rely on Algerian cuisine because people don\u2019t know it, and people avoid things they don\u2019t know,\u201d he says. \u201cOn the other hand, a lot of people want an adventure to discover things, and this is me. The food we cook is not commercialised, it\u2019s traditional.\u201d<\/p>\n<p class=\"selectionShareable\">Rotating daily specials include\u00a0<em><a href=\"https:\/\/theodehlicious.com\/algerian-chakhchoukha-recipe\/\">chakhchoukha<\/a><\/em>, originating from the\u00a0<em><a href=\"https:\/\/afrifoodnetwork.com\/recipes\/appetizer-recipes\/chekhchoukha\/\">Chaoui<\/a><\/em>\u00a0Berber people, and\u00a0<em>rechta<\/em>, a\u00a0<a href=\"https:\/\/www.tasteatlas.com\/rechta\">speciality<\/a>\u00a0in the northern cities of Constantine and Algiers, both comprising semolina dough, chicken broth, chickpeas, turnip, zucchini, and Ras el Hanout.<\/p>\n<table border=\"1\" cellspacing=\"1\" cellpadding=\"1\">\n<tbody>\n<tr>\n<td><iframe id=\"instagram-embed-3\" class=\"instagram-media instagram-media-rendered\" src=\"https:\/\/www.instagram.com\/p\/CxlZ4KQx8Ns\/embed\/?cr=1&amp;v=14&amp;wp=956&amp;rd=https%3A%2F%2Fwww.newarab.com&amp;rp=%2Ffeatures%2Falgerian-cuisine-tickles-taste-buds-us-palette#%7B%22ci%22%3A3%2C%22os%22%3A4348%2C%22ls%22%3A1538.0999999046326%2C%22le%22%3A3102.399999856949%7D\" height=\"684\" frameborder=\"0\" scrolling=\"no\" allowfullscreen=\"allowfullscreen\" data-instgrm-payload-id=\"instagram-media-payload-3\" data-mce-fragment=\"1\"><\/iframe><\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p class=\"selectionShareable\">\u201cThe food is like my mom\u2019s food,\u201d says Bekkadja about Kasbah Caf\u00e9. \u201cThey cook it with\u00a0<em>anas<\/em>, affection, like they love what they do. When I want to be around an Algerian family, they are that family to me. And on top of that, having their food gives me that \u2018home away from home\u2019 connection.\u201d<\/p>\n<h3><strong>A celebration of Algerian cultural diversity<\/strong><\/h3>\n<p class=\"selectionShareable\">The Kasbah Caf\u00e9 sells Algerian, North African, and Arabic pastries baked in-house, such as\u00a0<em>baklava<\/em>,\u00a0<em>dziriyat<\/em>,\u00a0<em>makrout<\/em>,\u00a0<em>griwesh<\/em>, as well as baguette, croissant, and mille-feuille, which reflects the range of Eastern and European influence in Algerian cuisine and history.<\/p>\n<p class=\"selectionShareable\">\u201cThe French occupied the country for 132 years,\u201d says Fekraoui. \u201cFood, art, colours, and music are human heritage, it is a universal heritage, and everybody participates in it.\u201d<\/p>\n<div class=\"embedded-entity\" data-embed-button=\"node\" data-entity-embed-display=\"view_mode:node.inline_entity_embed\" data-entity-type=\"node\" data-entity-uuid=\"e5b90344-d9ab-46a6-9df0-18ae12b885d6\" data-langcode=\"en\">\n<div class=\"node node--type-features node--view-mode-inline-entity-embed horizontal-media-teaser-view-mode xsmall anchor-all clearfix\" data-history-node-id=\"3603535\" data-template=\"template-6\">\n<div class=\"left col-6 col-sm-6\">\n<div class=\"inline-embed-entity\">\n<div class=\"embed-entity-title\">\n<div class=\"field field--name-node-title field--type-ds field--label-above\"><\/div>\n<\/div>\n<div class=\"embed-entity-wrappers\">\n<div class=\"embed-entity-author-date\">\n<div class=\"field field--name-field-auth-loc field--type-entity-reference field--label-hidden field__items\">\n<div class=\"field__item\">\n<div class=\"author-location author-location--type-author-location author-location--view-mode-author-name-text text-teaser-view-mode small anchor-all clearfix\">\n<div class=\"main-content\">\n<div class=\"field field--name-field-author field--type-entity-reference field--label-hidden field__item\"><\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<p class=\"selectionShareable\">Kolleen M. Guy, associate professor of history at Duke Kunshan University, says national cuisine is one tool to understand the complex legacy of\u00a0<a href=\"https:\/\/www.brepolsonline.net\/doi\/pdf\/10.1484\/J.FOOD.1.100981\">colonialisation<\/a>.<\/p>\n<p class=\"selectionShareable\">\u201cWe can decolonise a country, but decolonising a diet is a much longer process and I\u2019m not even sure it\u2019s possible,\u201d Guy says.<\/p>\n<p class=\"selectionShareable\">Today, Algerian Amerian chefs embrace their cuisine\u2019s diverse influences. \u201cEach dish has a story and we have to tell the story,\u201d Bahloul says.<\/p>\n<p class=\"selectionShareable\">After all, national cuisine can be a gateway to learning about the layers of a people\u2019s history and identity.<\/p>\n<p class=\"selectionShareable\">\u201cWe should be loud and proud about our culture and sharing our stories and experiences,\u201d says Bekkadja.<\/p>\n<div class=\"ad-gpt-pro\" data-web=\"[480, 320], [400, 300], [336, 280], [300, 300], [300, 250], [250,250]\" data-tablet=\"[480, 320], [400, 300], [336, 280], [300, 300], [300, 250], [250,250]\" data-mob=\"[300, 300], [300, 250], [250,250]\">\n<div id=\"div-gpt-ad-inread-4\" class=\"ad-gpt-pro-slot\" data-google-query-id=\"CNrR_tvkh4QDFauyJwIdmUkHuQ\">\n<div id=\"google_ads_iframe_\/270638763\/TNA_InRead_3__container__\"><\/div>\n<\/div>\n<\/div>\n<p class=\"selectionShareable\">\u201cNow the question is: how do we bring more people to come and try the food, learn the history, and learn the culture?
