Le co-inventeur d\u00e9sign\u00e9 du\u00a0tacos lyonnais dans sa version pr\u00e9-sauce gruy\u00e8re a\u00a0m\u00eame \u00e9t\u00e9 nomm\u00e9 cet \u00e9t\u00e9 directeur des op\u00e9rations de\u00a0<a href=\"https:\/\/tribunedelyon.fr\/2021\/08\/08\/jean-christophe-vincent-revient-sur-lechec-du-sc-lyon-et-esquisse-lavenir-de-lyon-la-duchere\/\" rel=\"noopener\">Lyon-La\u00a0Duch\u00e8re<\/a>, deuxi\u00e8me club de\u00a0football de\u00a0la ville. On le retrouve au \u00ab\u00a09<\/em><em><sup>e<\/sup><\/em><em>\u00a0Avenue\u00a0\u00bb, un snack qu\u2019il a\u00a0fond\u00e9 en 2005 \u00e0\u00a0La Sauvegarde (Lyon\u00a09<\/em><em><sup>e<\/sup><\/em><em>) avant de\u00a0laisser la main \u00e0\u00a0son beau-fr\u00e8re pour se concentrer sur le ballon rond. Le temps de\u00a0savourer quelques hamburgers poulet-cheddar, on lui demande, \u00e9videmment, de\u00a0nous raconter les balbutiements du\u00a0tacos lyonnais depuis son snack de\u00a0la Grappini\u00e8re. \u00ab\u00a0C\u2019est un truc de\u00a0fou\u2026\u00a0\u00bb<\/em><\/p>\n<p align=\"justify\"><strong>Racontez-nous comment est n\u00e9 le tacos lyonnais\u202f!<\/strong><\/p>\n<p align=\"justify\">Mes parents ont toujours \u00e9t\u00e9 commer\u00e7ants. Ils ont achet\u00e9 une boucherie \u00e0\u00a0Vaulx-en-Velin o\u00f9 on s\u2019est install\u00e9, nous les enfants. Un local s\u2019est lib\u00e9r\u00e9, coll\u00e9 \u00e0\u00a0la boucherie, et\u00a0on l\u2019a rachet\u00e9. Il y avait \u00ab\u00a0Stop Faim\u00a0\u00bb, la boucherie, le bureau de\u00a0tabac, le salon de\u00a0coiffure, une petite \u00e9picerie exotique et\u00a0le \u00ab\u00a0Ptit gourmand\u00a0\u00bb. On \u00e9tait partis pour \u00eatre traiteurs, faire des plats cuisin\u00e9s \u00e0\u00a0emporter mais finalement, on a\u00a0chang\u00e9 en cours de\u00a0route et\u00a0transform\u00e9 \u00e7a en snack, fin 1998. Un jour, on avait fait le service du\u00a0midi et\u00a0c\u2019\u00e9tait calme. Mon fr\u00e8re me dit que les gens en ont un peu marre du\u00a0sandwich am\u00e9ricain. Je lui ai dit\u00a0: <em>\u00ab\u00a0Tu te rappelles, Maman, ce qu\u2019elle nous faisait en \u00e9t\u00e9\u202f?\u00a0\u00bb <\/em>C\u2019\u00e9tait une petite galette sur laquelle elle nous balan\u00e7ait un peu de\u00a0hmiss, une sorte de\u00a0ratatouille, tomate, poivrons, oignons. On a\u00a0balanc\u00e9 tout \u00e7a dans une galette simple, parce que si on commen\u00e7ait \u00e0\u00a0faire comme faisait notre m\u00e8re\u2026 C\u2019est une pr\u00e9paration de\u00a0fou, une p\u00e2te qui se pr\u00e9pare le matin, qui se fait monter, c\u2019est compliqu\u00e9. On a\u00a0mis la sauce traditionnelle des Turcs, on entendait toujours <em>\u00ab\u00a0harissa mayo, harissa mayo\u00a0\u00bb<\/em>. On a\u00a0vu que c\u2019\u00e9tait pas trop garni si on fermait la p\u00e2te, donc on a\u00a0rajout\u00e9 un petit peu de\u00a0frites, avec du\u00a0fromage. \u00c0\u00a0l\u2019\u00e9poque, on balan\u00e7ait du\u00a0fromage en carr\u00e9 orange l\u00e0, du\u00a0cheddar, il n\u2019y avait pas encore de\u00a0sauce gruy\u00e8re. Et l\u00e0, au moment de\u00a0la fermeture du\u00a0tacos, c\u2019\u00e9tait marrant, Habib m\u2019a dit\u00a0: <em>\u00ab\u00a0Mais comment \u00e7a va tenir, si on plie la feuille de\u00a0gauche, la feuille de\u00a0droite\u202f? \u00c7a va d\u00e9gouliner\u202f!\u00a0\u00bb<\/em> Donc on a\u00a0ferm\u00e9 sur les c\u00f4t\u00e9s et\u00a0on l\u2019a pos\u00e9 sur la plaque \u00e0\u00a0panini. On regardait toutes les dix secondes\u202f! <em>(rires)<\/em> En relevant la grille, \u00e7a avait fait des traces en longueur, on l\u2019a tourn\u00e9, et\u00a0\u00e7a a\u00a0donn\u00e9 l\u2019aspect quadrill\u00e9.<\/p>\n<p align=\"justify\"><strong>Quelle \u00e9tait la toute premi\u00e8re viande que vous avez mise dans un tacos\u202f?<\/strong><\/p>\n<p align=\"justify\">C\u2019\u00e9tait du\u00a0steak\u202f! Et on l\u2019a pos\u00e9 sur une assiette, on l\u2019a coup\u00e9 en deux, un gamin est rentr\u00e9 il m\u2019a dit<em> \u00ab\u00a0C\u2019est quoi \u00e7a\u202f?\u00a0\u00bb <\/em>Mon fr\u00e8re sort\u00a0:<em> \u00ab\u00a0C\u2019est un tacos\u00a0\u00bb, <\/em>mais on dit \u00ab\u00a0tacos\u00a0\u00bb parce qu\u2019on voit une galette, et\u00a0en fait c\u2019est juste \u00e7a\u2026 Mon fr\u00e8re lui en a\u00a0fait un, et\u00a0c\u2019est parti. Les gens ont oubli\u00e9 l\u2019Am\u00e9ricain\u202f!<\/p>\n<p align=\"justify\"><strong>\u00c0\u00a0quoi pensez-vous quand vous voyez ce qu\u2019est devenu le tacos\u202f?<\/strong><\/p>\n<p align=\"justify\">J\u2019en mange pas\u202f! Il y en a\u00a0qui se le sont appropri\u00e9, il y en a\u00a0qui disent que le meilleur tacos, c\u2019est O\u2019Tacos. Mais c\u2019est d\u00e9gueulasse\u202f! Qu\u2019est-ce qu\u2019ils font de\u00a0mal\u202f? Ils ne le font pas avec amour. Je le jure, m\u00eame la fa\u00e7on de\u00a0fermer le tacos, eh bien, elle a\u00a0son go\u00fbt. Il faut ce fameux hmiss qui se pr\u00e9pare, le poivron qui se fait griller et\u00a0o\u00f9 la peau s\u2019enl\u00e8ve, on le laisse reposer avec les tomates\u2026<\/p>\n<p align=\"justify\"><strong>Quel a\u00a0\u00e9t\u00e9 le r\u00f4le de\u00a0Salah Felfoul l\u00e0-dedans\u202f?<\/strong><\/p>\n<p align=\"justify\">La cerise sur le g\u00e2teau. Un jour il passe au snack, et\u00a0il me dit\u00a0: <em>\u00ab\u00a0Je vais te donner une recette, la sauce gruy\u00e8re\u00a0\u00bb.<\/em> Il m\u2019a dit\u00a0: <em>\u00ab\u00a0Tu mets \u00e7a, \u00e7a, \u00e7a.\u00a0\u00bb<\/em> C\u2019est un grand cuistot. Un mec d\u2019une gentillesse\u2026 Il s\u2019en fiche de\u00a0la concurrence, il aide tout le monde. La sauce gruy\u00e8re, c\u2019est Salah et\u00a0lui seul. Le tacos, c\u2019est Nono et\u00a0Habib.<\/p>\n<p align=\"justify\"><strong>Vous ne regrettez pas de\u00a0ne pas avoir d\u00e9pos\u00e9 de\u00a0brevet\u202f?<\/strong><\/p>\n<p align=\"justify\">Bien s\u00fbr que si, mais\u2026 On en \u00e9tait pas l\u00e0. J\u2019ai envie de\u00a0te dire que je n\u2019ai jamais, jamais pens\u00e9 \u00e0\u00a0lancer une cha\u00eene. Et m\u00eame maintenant, si tu me donnes tous les millions, la possibilit\u00e9 de\u00a0monter une cha\u00eene, je ne le ferai pas. C\u2019est un concept que tout le monde peut faire, et\u00a0le soleil brille pour tout le monde\u202f! Apr\u00e8s si on me donne un troph\u00e9e, je dirais pas non\u2026 C\u2019est une fiert\u00e9 quand m\u00eame, non\u202f?<\/p>\n<h2 class=\"western\" align=\"justify\"><strong><span style=\"font-size: medium;\">Salade, tomate, oignons\u202f?<\/span><\/strong><\/h2>\n<p align=\"justify\">Le d\u00e9bat est houleux. Le tacos lyonnais a\u00a0comme particularit\u00e9 d\u2019\u00eatre hautement personnalisable\u00a0: viande(s), sauce(s), l\u00e9gumes\u2026 Il doit probablement une partie de\u00a0son succ\u00e8s \u00e0\u00a0cette flexibilit\u00e9 mais de\u00a0fait, les pr\u00e9f\u00e9rences de\u00a0chacun cr\u00e9ent une confusion sur la nature du\u00a0\u00ab\u00a0vrai tacos\u00a0\u00bb. Existe-t-il r\u00e9ellement un mod\u00e8le standard du\u00a0d\u00e9lice lyonnais\u202f?<\/p>\n<p align=\"justify\"><em>\u00ab\u00a0S\u2019il n\u2019y a\u00a0pas de\u00a0sauce gruy\u00e8re, ce n\u2019est pas un tacos, <\/em>assure avec conviction Amine Fourti, du\u00a0\u00ab\u00a0Hamamet Food\u00a0\u00bb, \u00e0\u00a0Charpennes. <em>Un vrai tacos, c\u2019est une bonne viande, frites et\u00a0sauce gruy\u00e8re faite maison. La sauce gruy\u00e8re c\u2019est la base, c\u2019est \u00e7a qui fait la diff.\u2019\u00a0\u00bb<\/em> Du c\u00f4t\u00e9 du\u00a0\u00ab\u00a0Caupona\u00a0\u00bb, ouvert \u00e0\u00a0l\u2019automne pr\u00e8s de\u00a0l\u2019H\u00f4tel de\u00a0ville, Tin Nguyen s\u2019av\u00e8re nettement moins radical\u00a0:<em> \u00ab\u00a0C\u2019est plein de\u00a0petits d\u00e9tails, O\u2019Tacos ou Chamas font des gratin\u00e9s, ne mettent pas de\u00a0l\u00e9gumes dans leurs tacos, il y a\u00a0plein de\u00a0sauce gruy\u00e8re, \u00e7a d\u00e9gouline\u2026 Nous, notre escalope est marin\u00e9e, la leur, non, ils la font blanche. Nous, la sauce gruy\u00e8re, on ne la met pas d\u2019office\u00a0\u00bb.<\/em><\/p>\n<p align=\"justify\">Si le tacos lyonnais contient originellement du\u00a0hmiss ou plus commun\u00e9ment de\u00a0la chakchouka, la formule salade-tomate-oignons s\u2019y substitue r\u00e9guli\u00e8rement, notamment chez des restaurateurs convertis au tacos mais autrefois tourn\u00e9s vers le kebab. <strong>\u00ab\u00a0Salade tomate oignons\u202f? C\u2019est une honte\u00a0\u00bb<\/strong><em>,<\/em> s\u2019emporte le pionnier Nordine Belhout.<em> \u00ab\u00a0Tomate, oignons, je veux bien. Mais de\u00a0la salade qui passe dans un four\u202f? C\u2019est honteux\u202f!\u00a0\u00bb<\/em><\/p>\n<p align=\"justify\">Du c\u00f4t\u00e9 de\u00a0Grenoble et\u00a0du\u00a0\u00ab\u00a0Tacos de\u00a0Lyon\u00a0\u00bb ouvert en 2005, les tacossiers n\u2019ont pas fait dans la dentelle en retirant purement et\u00a0simplement la chakchouka. C\u2019est par cons\u00e9quent cette alternative alpine de\u00a0la recette qui s\u2019est export\u00e9e par les cha\u00eenes puisque la premi\u00e8re d\u2019entre elles, O\u2019Tacos, est n\u00e9e \u00e0\u00a0Grenoble, et\u00a0son exportation rapide a\u00a0fait d\u00e9vier l\u2019image commune du\u00a0tacos vers cette version sans chakchouka ni crudit\u00e9s.
