Un plat, c\u2019est l\u2019histoire d\u2019un terroir, d\u2019une contr\u00e9e\u00a0\u00bb, est-il soulign\u00e9 dans le livre. Yasmine Sellam, qui a \u00e9t\u00e9 membre du jury du concours \u00ab\u00a0Master chef Alg\u00e9rie, est g\u00e9rante du restaurant \u00ab\u00a0Dar Jeddi\u00a0\u00bb, \u00e0 Alger.<strong><br \/>\n<\/strong><\/p>\n<p><strong>24H Alg\u00e9rie: Il est rare de trouver en Alg\u00e9rie un beau livre consacr\u00e9 \u00e0\u00a0<a href=\"https:\/\/www.cuisineaz.com\/diaporamas\/la-cuisine-algerienne-2579\/interne\/1.aspx\" target=\"_blank\" rel=\"noopener\">l\u2019art culinaire<\/a>. Comment est justement n\u00e9 ce projet ?<\/strong><\/p>\n<p>Yasmine Sellam: Un jour, j\u2019ai fait un voyage au Y\u00e9men. Les gens ne connaissaient pas l\u2019Alg\u00e9rie. J\u2019ai trouv\u00e9 cela curieux et choquant. J\u2019\u00e9tais oblig\u00e9e de leur dire que l\u2019Alg\u00e9rie est ce grand pays qui se trouve entre la Tunisie et le Maroc. J\u2019ai compris que nous ne faisions pas grand chose pour se faire conna\u00eetre. J\u2019ai d\u00e9cid\u00e9 alors de passer \u00e0 l\u2019\u00e9criture. Je n\u2019ai pas \u00e9crit ce livre pour les \u00e9trangers mais pour les alg\u00e9riens. Mon message : \u00ab\u00a0Connaissez d\u2019abord votre culture et votre cuisine, quand vous sortez vous les d\u00e9fendrez et vous ferez mieux conna\u00eetre votre pays\u00a0\u00bb. L\u2019art cultinaire alg\u00e9rien n\u2019est pas b\u00e2tard. Il est enracin\u00e9 dans l\u2019Histoire.<\/p>\n<p><strong>Et vous avez \u00e9voqu\u00e9 toutes les influences ext\u00e9rieures sur la cuisine alg\u00e9rienne ?<\/strong><\/p>\n<p>J\u2019ai voulu chronologiquement raconter les influences des Romains, des Babyloniens, des Pharaons, des Abassadides, des Omeyyades, des Andalous, des Ottomans et des Fran\u00e7ais. Notre cuisine a subi toutes ces influences, mais nous aussi avons notre propre cuisine qui est connue partout dans le monde. Le couscous est un plat qui est servi dans tous les continents. Le couscous est pr\u00e9sent dans la cuisine traditionnelle br\u00e9silienne. La moghrabia, qui est le berkous, est pr\u00e9sente au Moyen-Orient, etc<\/p>\n<p><strong>L\u2019UNESCO a class\u00e9 le couscous dans la liste du patrimoine mondial en tant que \u00ab\u00a0plat maghr\u00e9bin\u00a0\u00bb. Qu\u2019en pensez-vous ?<\/strong><\/p>\n<p>Je suis contre ceux qui disent qu\u2019il faut trouver un lieu de naissance d\u2019une recette. Une recette n\u2019a pas de lieu de naissance. La recette est un produit qui na\u00eet l\u00e0, se d\u00e9veloppe ici et qui se d\u00e9veloppe encore l\u00e0-bas et ainsi de suite. Une recette peut faire le tour du monde. Ce qui est important est d\u2019expliquer comment on pr\u00e9pare nos plats de couscous. Dans le livre, je souligne que les actes de la dimension internationale du couscous se sont jou\u00e9s en Alg\u00e9rie, ni au Maroc ni en Tunisie.<\/p>\n<p><strong>Et quelles sont les influences qui sont rest\u00e9es, r\u00e9sister \u00e0 l\u2019\u00e9preuve du temps?<\/strong><\/p>\n<p>Chaque influence \u00e9crase celle qui l\u2019a pr\u00e9c\u00e9d\u00e9e mais il y a un cumul. Beaucoup de plats sont rest\u00e9s. Les Abbassides nous ont laiss\u00e9 beaucoup de plats comme El Barania (rago\u00fbt \u00e0 base d\u2019aubergine qui ressemble au Mderbel). Contrairement \u00e0 l\u2019id\u00e9e re\u00e7ue, on peut faire des fritures avec l\u2019huile d\u2019olive, seulement il faut savoir ma\u00eetriser les temp\u00e9ratures. La cuisine est d\u2019abord une science. La cuisine alg\u00e9rienne est profond\u00e9ment m\u00e9diterran\u00e9enne.<\/p>\n<p><strong>Reste-il dans la cuisine alg\u00e9rienne des plats qui remontent au Moyen-\u00e2ge et \u00e0 l\u2019antiquit\u00e9 ?<\/strong><\/p>\n<p>La guernina (le chardon marie) qu\u2019on utilise dans la pr\u00e9paration du couscous aux l\u00e9gumes remonte \u00e0 la pr\u00e9histoire. Les plats andalous sont ceux n\u00e9s au Moyen-\u00e2ge.<\/p>\n<p><strong>Aujourd\u2019hui, en Alg\u00e9rie, la Chawarma et la Maynama, qui sont des mets orientaux et africains, sont partout en Alg\u00e9rie.Comment faire pour sauvegarder l\u2019identit\u00e9 culinaire alg\u00e9rienne au milieu de cette diversit\u00e9 \u00a0?<\/strong><\/p>\n<p>Il y a une menace sur \u00a0l\u2019identit\u00e9 culinaire alg\u00e9rienne. Les Alg\u00e9riens ne connaissent pas encore toute la richesse de leur cuisine. Il faut \u00e9duquer les jeunes sur notre gastronomie ancienne qui est bonne pour la sant\u00e9. C\u2019est n\u00e9cessaire. Les Numides, qui \u00a0sont des Alg\u00e9riens, ont laiss\u00e9 beaucoup de recettes.
