{"id":58942,"date":"2022-08-05T14:17:32","date_gmt":"2022-08-05T13:17:32","guid":{"rendered":"https:\/\/jazairhope.org\/?p=58942"},"modified":"2022-08-05T14:17:32","modified_gmt":"2022-08-05T13:17:32","slug":"memoire-culinaire-de-lalgerie-aux-origines-de-lart-culinaire-algerien","status":"publish","type":"post","link":"https:\/\/jazairhope.org\/fr\/memoire-culinaire-de-lalgerie-aux-origines-de-lart-culinaire-algerien\/","title":{"rendered":"&#8220;M\u00e9moire culinaire de l&#8217;Alg\u00e9rie&#8221;, aux origines de l&#8217;art culinaire alg\u00e9rien"},"content":{"rendered":"<div class=\"itemIntroText col-xs-hidden  selectionShareable\">\n<p><strong>ALGER &#8211; Dans son ouvrage intitul\u00e9 &#8220;M\u00e9moire culinaire de l&#8217;Alg\u00e9rie, histoire de recettes&#8221;, Yasmina Sellam propose \u00e0 ses lecteurs d&#8217;explorer la gastronomie alg\u00e9rienne par le prisme de l&#8217;histoire de l&#8217;alimentation, de la litt\u00e9rature gastronomique universelle et par celui de l&#8217;authenticit\u00e9 d&#8217;un riche patrimoine local enrichi au fil du temps, tout en remontant jusqu&#8217;\u00e0 la gastronomie de l&#8217;antiquit\u00e9.<\/strong><\/p>\n<\/div>\n<div class=\"itemFullText selectionShareable\">\n<p>Publi\u00e9 aux \u00e9dition Anep \u00e0 l&#8217;occasion du 25e Salon international du livre d&#8217;Alger (Sila), tenu r\u00e9cemment, ce beau-livre de 110 pages se base sur un riche travail de documentation sur l&#8217;histoire de l&#8217;alimentation depuis la pr\u00e9histoire et les r\u00e8gles d&#8217;une nourriture saine dans l&#8217;Empire de Chine de Confucius (5 si\u00e8cle avant notre \u00e8re) ou la Rome de Apicius, jusqu&#8217;aux potentiel de l&#8217;art culinaire contemporain.<\/p>\n<p>L&#8217;auteur a fait le choix de publier ce que mangeait nos lointains anc\u00eatres et de redonner aux lecteurs l&#8217;envie d&#8217;explorer cette alimentation en consid\u00e9rant &#8220;qu&#8217;un plat est l&#8217;histoire d&#8217;un terroir (&#8230;) et que la richesse gastronomique de l&#8217;Alg\u00e9rie est le r\u00e9sultat du g\u00e9nie local et des empreintes des autres civilisations&#8221;. Yasmina Sellam qui s&#8217;est \u00e9loign\u00e9 du simple livre de recette, s&#8217;interroge sur les raisons qui ont laiss\u00e9 ce patrimoine l\u00e9gu\u00e9 de g\u00e9n\u00e9ration en g\u00e9n\u00e9ration &#8220;compl\u00e8tement m\u00e9connu&#8221;.<\/p>\n<blockquote><p><em><strong>Cette agronome de formation expose \u00e9galement des r\u00e9sum\u00e9s d&#8217;\u00e9crits antiques sur l&#8217;art culinaire \u00e0 l&#8217;exemple des tablettes babyloniennes dat\u00e9es de 400 ans avant notre \u00e8re, consid\u00e9r\u00e9es comme les premiers documents culinaires, et qui donnent des &#8220;recettes r\u00e9alisables de nos jours&#8221;.<\/strong><\/em><\/p><\/blockquote>\n<p>L&#8217;auteur cite \u00e9galement &#8220;Kitab Al Tabkh&#8221; de Ibrahim Ibn El Mahdi, premier livre de cuisine en langue arabe malheureusement disparu et un autre livre \u00e9ponyme de Ibn Sayyar El Warrak qui est &#8220;le premier livre \u00e0 parvenir int\u00e9gralement jusqu&#8217;\u00e0 nous&#8221;.<\/p>\n<p>Yasmina Sellam propose de remonter le fil de l&#8217;art culinaire alg\u00e9rien, en se basant d&#8217;abord sur les plus anciens ustensiles d\u00e9couverts sur les quelques \u00e9crits et recherches disponibles qui renseignent sur l&#8217;alimentation des numides ou sur l&#8217;h\u00e9ritage Omeyyade, Abbasside, andalous ou encore ottoman.<\/p>\n<p>En mati\u00e8re de recettes, l&#8217;auteure propose les plus anciennes r\u00e9alisations connues de l&#8217;art culinaire alg\u00e9rien comme &#8220;Le poulet \u00e0 la numide&#8221; et &#8220;les dattes farcies&#8221;, cit\u00e9es par Apicius, figure de la haute soci\u00e9t\u00e9 romaine, et le couscous alg\u00e9rien dont la diversit\u00e9, l&#8217;authenticit\u00e9 et les origines ne sont plus \u00e0 d\u00e9montrer depuis son classement au patrimoine mondial de l&#8217;humanit\u00e9.<\/p>\n<p>Une petite s\u00e9lection de recettes authentiques sont \u00e9galement propos\u00e9es par Yasmina Sellam qui a fait le choix de mettre \u00e9galement en avant l&#8217;enrichissement de l&#8217;art culinaire alg\u00e9rien par diff\u00e9rentes sous l&#8217;influence de diff\u00e9rentes cultures.<\/p>\n<p>Ing\u00e9nieur agronome de formation et enseignante \u00e0 l&#8217;\u00e9cole normale sup\u00e9rieure, Yasmina Sellam a ouvert sa table d&#8217;h\u00f4tes en 2011, apr\u00e8s sa retraire, avec l&#8217;objectif de faire conna\u00eetre la cuisine traditionnelle typiquement alg\u00e9rienne.
